Cooking with Kasia!

JCC Krakow hosts a weekly Friday night dinner for over 50 members of our local community + guests from around the world every week between September and July. As we’re taking a break from our Shabbat dinners in August it means we’ll have to make it through the month without Kasia’s delicious food! But fear not, she’s decided to share some of her recipes with everyone so that no matter where you are, you can always feel like at a JCC Krakow shabbat table!

For starters (literally) check out the recipes for her two famous salads: kale / cranberry and quinoa / sweet potato! 🥗🍋🍎🍯


KASIA’S KALE / CRANBERRY SALAD


Ingredients:

  • bunch of fresh kale

  • 2 apples

  • 1/2 cup of dried cranberries

  • 1/2 cup of almond flakes or whole chopped

  • Sauce:

  • juice from one lemon

  • 2 tablespoons of honey

  • 3 tablespoons of olive oil

  • Salt, pepper

Preparation:

Chop the kale, cut the apples into small cubes. Mix with cranberries, almonds and sauce.


KASIA’S QUINOA / SWEET POTATO SALAD


Ingredients:

  • 4 sweet potatoes

  • 7 oz of quinoa

  • olive oil

  • juice from one lemon

  • parsley

  • cinnamon

  • salt, pepper

Preparation:

Peel the sweet potatoes, cut into small cubes and put on a baking tray. Drizzle with olive oil, add a pinch of cinnamon and salt. Bake at 374℉ until brown. Sweet potatoes must be soft inside. Cook quinoa and mix everything together. Add lemon juice, parsley, oil, salt and pepper. You can also add corn.
